Ingredients for Rack of Lamb

1 10 to 12 oz. Rack of Lamb (two bones), clean & French
1 medium size Idaho Potato
Truffle Oil
Blended Oil
Spinach Greens
Garlic, minced
fresh Mint
Veal Demi
Salt & Black pepper

Method for Rack of Lamb

• Clean the rack of lamb trimming the fact and the bones set aside.
• Cover the potato in blended oil and dust with salt and pepper.
• Wrap the potato in aluminum foil and cook in a conventional oven for 30 minutes at 350°.
• Potato needs to be tender when touched, but not too soft. Let cool it down.
• Take about 3oz of spinach greens and sauté in blended oil and salt, pepper and minced garlic if need it.
• Bring about ¼ cup of veal demi and fresh mint leaves to boil and reduce the heat and simmer for 5 minutes.
• Meanwhile cook the lamb in a grill at the desire temperature.
• Break the potato in pieces and drop it in a fryer and let get golden crispy remove the oil excess and combine in a bowl with a drizzle of truffle oil and seasoning with salt and pepper to taste.
