Sweet & Sour Cabbage Soup

Ingredients for Sweet & Sour Cabbage Soup
3 lb Chuck Roast (with bone if possible)
9 cups Water
2 lb head Cabbage, shredded
1½ cups Onion, diced
3-4 Carrots, sliced
2 stalks Celery, diced
2 16 oz. Cans Tomatoes
8 Gingersnaps
1 tsp Salt
½ tsp Celery Salt
½ tsp Dill weed
Pepper, freshly ground to taste
½ cup White Sugar
¼ cup Light Brown Sugar
1 tsp Sour Salt (citric acid)
Method for Sweet & Sour Cabbage Soup
• In large soup pot combine chuck roast and water and bring to a boil. Simmer for ½ hour. Skim water.
• Add cabbage, onion, carrots, celery, tomatoes, gingersnaps and all seasonings except sugars and sour salt. Bring to a boil. Lower heat and simmer 3-4 hours.
• Pull out chuck roast and set aside to cool.
• Add sugars and sour salt to soup pot. Cook over medium heat for 15 minutes. Taste and adjust seasoning as desired.
• Cut meat into bite-sized pieces and put back into soup pot.
