Ceviche of Sea Scallops with Chiles & Lime

Serves 8 as an Appetizer
Ingredients for Ceviche of Sea Scallops
2 lb Day Boat Sea Scallops, small to medium diced
2 each Cucumber, peeled, seeds removed & small diced
1 cup Mango, peeled, seed removed & small diced
1 cup Pineapple, peeled, core removed & small diced
½ each Red Onion, peeled & small diced
2 each Red Jalapeño, remove seeds & stems, small diced
2 each Green Jalapeño, minced
2 tbsp Fresh Mint, chopped
½ cup Cilantro Leaves, chopped
2 tbsp Silver Tequila
1 cup Lemon Juice
1 ½ cup Lime Juice
Method for Ceviche of Sea Scallops
• Combine all the ingredients together and allow to marinate for 30 minutes.
• Serve on fried tortilla chips and with guacamole.
