Ingredients for Tart Dough

2½ cup All-Purpose Flour
1 Teaspoon Sea Salt or Kosher Salt
1 cup Unsalted Butter (8oz or ½ pound)
¼ cup Ice Water

Ingredients for Tart Filling
2/3 cup Chestnut Honey or Local Honey
½ cup Sugar
1 tsp Sea Salt or Kosher Salt
1 cup Butter
½ cup Cream
1 whole Egg
1 Egg Yolk
1¼ cups Pine Nuts

Method for Tart Dough

• Place the flour and salt into the bowl of a food processor and pulse to combine. Next, add the butter one cube at a time until the mixture resembles course crumbs(about 10 seconds). Now turn machine on all the way and slowly add ice water until the dough “comes together.” The Dough is now ready to be divided in half and flattened into disks (2) and covered in plastic wrap. Refrigerate at least 30 minutes to an hour, or overnight.
