Lobster Club Sandwich on Brioche

Ingredients for Lobster Club Sandwich on Brioche
1/4 Lobster, sliced paper thin
3 ea Pepperidge Farm Brioche, toasted
1 oz Love Creek Apple, sliced paper thin
1/4 Avocado, sliced paper thin
2 ea Romaine Leaves
3 ea Beefsteak Tomatoes, sliced
3 ea Bacon, cooked
2 oz Herbed Mayo
3 oz Pesca Chips
2 ea Sweet Piquante Peppers
Method for Lobster Club Sandwich on Brioche:
Layer club sandwich with lobster, apples and avocado on top half of club.
Layer lettuce, tomatoes and bacon on bottom half of club.
Spread herbed mayo on all three slices of brioche, toasted.
To plate; 4 toothpicks in sandwich, cut on bias, place chips in center of plate with sweet piquante peppers.
