1/2 lb Bay Scallops
2 ea Yellow Tomato Wedges
1 ea Red Onion, thinly sliced
3 tbsp Ginger (thin strips)
1 ea Red Chili, fine diced
1 lb Purple Yam cooked al dente, cut on the bias (rounds)
8 oz of Rice Wine Vinegar

Ingredients for Garnish

fresh Green Onions, cut on the bias
