Sesame Tuna Tartare

Ingredients for Tuna Tartare

1/2 lb Fresh Tuna, cut into small dice
1 tbsp chopped Chives
1 tbsp minced Shallots
1 tbsp Sesame Oil
1 tbsp Extra Virgin Olive Oil
1/2 Cup Tuna Tartar Marinade
Sea Salt and Black Pepper, to taste
1 package Gyoza Dumpling Wrappers, cut into quarters and fried
8 Chive Batons, cut 3”

Method for Tuna Tartare

• Place tuna, shallots, chives, sesame oil, olive oil, marinade, salt and pepper in non-reactive bowl and mix carefully.
• Check seasoning and adjust if necessary.
• Arrange four plates with 3” ring molds in center.
• Fill ring molds with tuna mixture and carefully shape into place with the back of a spoon.
• Take off molds and drizzle wasabi vinaigrette around tuna in concentric circles.
• Arrange wontons around tuna with the point sticking into the tuna creating a blossom effect.
• Top with two chive batons.
