My 1st job was as a dishwasher for a small Italian restaurant in College Station and at that point knew I knew I wanted to be a Chef. Began Culinary school here in Austin after finishing high school. As any aspiring Chef worked for a few different places while developing my own style which was Italian with a hint a southwestern flavors, the flavors of dried chilis which contrasted well with the cheeses of Italy. I was then the Chef owner of Café Spiazzo which was such a success I then opened a second location in the third year. After six great years I had to let the restaurants go due to some unfortunate medical issues. Once I regained my health I was the chef of Gumbo’s for two years. I then moved on to P.F. Changs where I have enjoyed learning and preparing Asian cuisine, which offers new challenges as it is so unlike anything I have done.
Executive Chef, Cesar Moreno
I started my career in the restaurant business washing dishes at Romano's Macaroni Grill in Austin TX at the age of 19. It wasn't that I had any interest at the time to become a Chef, but that I needed a job! It wasn't long before that thing we all know as "The Service Industry" had captured my attention, embraced my soul, and I was hooked .From there I worked my way up to the prep line, Saute, the Grill, and also learned how to make pizza. With 8 years of experience under my belt, I became a Sous chef and held that position for three years until I got my big break with P.F. Changs China Bistro. Located across the street from Macaroni Grill, I jumped at the opportunity to become a part of the team. I was hired as a Sous Chef learning the aspects of preparing Cuisine from different regions in China and the ancient art of Wok Cooking. When my mentor and Executive Chef, Chef Terri left to embark on her own new journey, I began my own as Culinary Partner, taking her place enjoying the challenges and rewards this position fills as Executive Chef, Cesar Moreno!!!
