Ingredients for Chicken Salad

2 Whole Roasted or Rotisserie Chickens, meat picked & roughly chopped
½ cup Mayonnaise
2 tbsp Onion, minced
2 tbsp Celery, minced
4 tbsp Walnuts, toasted & chopped
¼ cup sliced Red Grapes
1 tbsp Dijon Mustard
Kosher Salt, to taste

Method for Roasted Free Range Chicken

• Preheat oven to 350°.
• Season a 3-4 pound chicken with kosher salt and pepper.
• Place in the oven and cook for approximately 1 hour or until the internal temperature of the chicken reaches 160°.
• Remove from the oven and allow for the chicken to cool to room temperature.
