Ingredients for Stuffed Portobello Cap

1 Portobello Mushroom
1 tsp of Sun-dried Tomatoes
2 tsp Spinach, freshly chopped
1 Artichoke Heart
¼ cup Feta Cheese
¼ cup Mozzarella
Field Greens
Aged Balsamic Vinegar
Balsamic Glaze
Garlic Butter
Minced Garlic

Method for Stuffed Portobello Cap

• Prep portobello by pulling the gills out of the cap.
• Baste the inside of the cap with garlic butter; making sure that you have several pieces of minced garlic in the cap.
• Mix the sun-dried tomatoes, spinach, artichoke heart, feta cheese, and mozzarella together. Then stuff the cap.
• Bake for approximately 12 minutes at 400°.
• Place the portobello in the center of the plate on a bed of field greens tossed in aged balsamic vinegar in the center of the plate.
• Drizzle with balsamic glaze on entire plate.
