SESAME SEED CRUSTED SCALLOPS, FENNEL & BLOOD ORANGE SALAD, UNI & FENNEL SAUCE

Ingredients
6 U-10 diver scallops
1 tray Uni (sea urchin roe)
1 bulb fennel, shaved thin
1/4 C fennel stalks, rough cut
2 blood oranges, peeled & sectioned
1/4 C toasted white sesame seeds
1/4 C black sesame seeds
3/4 C heavy cream, warm
1/2 C extra virgin olive oil
1/4 C champagne vinegar
1 t orange thyme
1/4 t honey
as needed salt & pepper
To Finish
Place 1 oz. of the uni sauce in the center of a 12” plate.
Take a chef’s spoonful of the fennel salad and place in the center of the uni sauce.
Take 3 scallops and place them just outside the edge of the uni sauce (3, 7, & 11 on the clock) and then place 3 blood orange segments directly on top of each scallop.
Sprinkle with fresh snipped chive blossoms.
