Cavatelli with Tomato Butter

Ingredients for Cavatelli

6 oz Semolina Flour
12 oz All Purpose Flour
20 oz Ricotta Cheese
2 Eggs
1oz Extra Virgin Olive Oil
1 tsp Salt
½ tsp
White Pepper

Method for Cavatelli

• Put all dry ingredients (flour, salt, pepper) in the bowl of a mixer.
• In a separate bowl mix the eggs and olive oil.
• While the machine is running on slow speed, slowly add the egg/oil mixture along with the cheeses making sure everything is evenly incorporated.
• Forming the Cavatelli: Cut dough into twelve equal pieces.
• Roll each piece into long logs approximately ½ in diameter.
• Cut logs into pieces 1 inch in length. Place on gnocchi paddle and form into cavatelli using the back edge of a butter knife. Alternatively you may roll using a cavatelli machine according to the manufacturers directions.
