Southern Style Cornbread

Ingredients for Southern Style Cornbread
4 cups All-Purpose White Flour
2 cups Yellow Cornmeal
2 cups white sugar
1 teaspoon salt
3 level tablespoons Baking Powder
4 large eggs
3 cups milk
2 tablespoons vegetable oil
1/2 pound butter (8 tbsp. melted – do not brown)
Method for Southern Style Cornbread
• In very large bowl combine white flour and cornmeal. Using the large whisk – gently blend these together to aerate.
• Add sugar, salt and baking powder. Blend again with the large whisk.
• In a separate bowl, whisk together the eggs, milk and vegetable oil.
• Pour the wet ingredients over the dry ingredients. With a large spoon, mix until just blended.
• Melt the butter. Do not let the butter brown.
• Add melted butter and fold in quickly
• Pour batter into a greased and floured 9x13 pan.
• Bake on center rack in a pre-heated 350° oven. Set timer for 45 minutes. After 45 minutes, check the center of cornbread. Increase cook time in 10 minute intervals until center of cornbread is cooked through. Oven temperatures will vary.
