Stuffed Scallops Vieinas Rellenas

Serves 6 as an Appetizer
Ingredients for Stuffed Scallops
¼ lb fresh Scallops
6 Scallops Shells or small Oven Proof Ramekins
½ cup Onions, diced small
¼ cup Red Bell Pepper, diced
1 cup of Dried Bread Crumbs
1 cup of Dry Sherry
2 tbsp of Olive Oil
2 tbsp of Whole Butter
1 cup of shredded Parmesan Cheese
Method for Stuffed Scallops
• Sauté onions and peppers in the olive oil and butter mixture.
• Add the scallops, cook for 5 minutes, then add the Sherry and bread crumbs.
• Place the mixture of stuffing in the scallop shells or ramekins.
• Bake in a 350º oven for 10 minutes. Top with shredded cheese and melt under the broiler.
