Ingredients for Salmon

1 lb Atlantic Salmon, 2
8 oz Smoked Salmon
4 Large Scallops
8 Large Shrimp
cup Heavy Cream
Salt, to taste
Pepper
Oba or Fresh Basil
Sake
White Wine

Method for Salmon

  • Slice each fillet lengthwise about half way and open flat.
  • Cover with plastic wrap or wax paper and roll or pound flat until it is 7” x 7”. Set aside.
  • Put scallops into food processor with heavy cream and process just until scallops are a dough consistency. Season with salt and pepper.
  • Cut shrimps and smoked salmon into 1/2” cubes.
  • Slice Oba or fresh basil into 1/4” strips.
  • Spread half of the scallop dough on each salmon fillet. Evenly divide the shrimps, smoked salmon and Oba over each fillet. Season with salt and pepper. Wrap each fillet. Sprinkle fillets with sake and white wine.
  • Steam fillets for about 10 minutes.
