Curried Rice with Edamame

Serves 6
Ingredients for Curried Wild Rice with Edamame
1 6 oz box Long Grain & Wild Rice mix
2 tsp butter
1 tsp Curry Powder
1/3 cup Green onion
2 cups Vegetable Broth
½ cup Craisins
4 oz frozen Edamame
sliced Almonds (for garnish)
Method for Curried Wild Rice with Edamame
• In a 4 quart stockpot, sauté green onion in butter.
• Add vegetable broth, rice, seasoning packet, and curry.
• Bring to a boil. Reduce to low, cover and cook for 20 minutes.
• In a separate pan, cook edamame in boiling water for 5 minutes. Drain.
• Stir edamame and craisins into rice.
• Serve topped with sliced almonds.
NOTE: Can be served hot or cold.
