Pollo alla Capriccio

Ingredients
puff pastry dough
2 breasts of chicken
1 egg white
garnish
basil and Italian parsley, chopped
2 roasted red bell peppers
spinach
provolone cheese
salt
fresh ground pepper
To Finish
Place one chicken breast on one layer of pastry.
Top the chicken with basil, parsley, spinach and a layer of provolone cheese.
Add roasted red bell peppers, another layer of cheese, spinach, basil and parsley.
Top with the second chicken breast.
Enclose the entire entrée with the second layer of puff pastry.
Pinch seal the edges of the product.
Brush with egg white.
Create steam-venting holes on the top by piercing the assembly with a toothpick.
Bake approximately 25 minutes at 350 degrees until golden brown.
As a suggested garnish, use rosemary sprigs, bundled carrots/ asparagus/bell peppers tied with chives and serve over a tomato rosemary sauce.
