2 ripe tomatoes
1 large sprig basil
1/2 lb blue crab, back fin meat
1 lb arugula
balsamic vinaigrette (see recipe)
fresh ground black pepper

1 T shallot, minced
1 T roasted garlic, minced
2 T dijon mustard
1/3 C balsamic vinegar
1 1/2 C virgin olive oil
sea salt and fresh ground pepper
