RISOTTO AI FRUTTI DI MARE (Seafood Risotto)

INGREDIENTS:

3 oz olive oil
3 garlic cloves
3 oz Italian parsley, chopped
24 oz clam juice
6 oz mussels
6 oz clams
4 oz calamari, cut up
4 oz shrimp, chopped
1 lb Arborio rice
8 oz roma tomatoes, chopped
1 oz butter

METHOD: RISOTTO

  • In a large sautée pan, heat 1 oz. of olive oil. Add rice and stir for two minutes.
  • Add seafood broth. The rice will absorb the juice while it’s cooking. Keep adding broth as you need it. Lower the heat and stir for 18 - 20 minutes.
