RISOTTO AI FRUTTI DI MARE (Seafood Risotto)

INGREDIENTS:
3 oz olive oil
3 garlic cloves
3 oz Italian parsley, chopped
24 oz clam juice
6 oz mussels
6 oz clams
4 oz calamari, cut up
4 oz shrimp, chopped
1 lb Arborio rice
8 oz roma tomatoes, chopped
1 oz butter
METHOD: RISOTTO
In a large sautée pan, heat 1 oz. of olive oil. Add rice and stir for two minutes.
Add seafood broth. The rice will absorb the juice while it’s cooking. Keep adding broth as you need it. Lower the heat and stir for 18 - 20 minutes.
