1 ea Leeks, pale green & white chopped
½ ea Yellow Onion, chopped
1 ea Fennel Bulb, chopped
2 oz Butter
2 tbs Flour
¼ c Tomato Paste
1 qt Lobster Stock
1 qt Heavy Cream
1 qt ½ & ½
8 ea Bay Leaves
10 ea Black Pepper Corns
Salt, to taste
White Pepper, to taste
¼ c Sherry Wine
