Penn Cove Mussels in Saffron Cream

Serves 4
Ingredients for Penn Cove Mussels
3 lb Penn Cove Mussels, scrubbed, debearded & picked over for dead loss
4 tbsp Olive oil
2 tbsp Garlic, minced
2 tbsp Shallots, minced
1 pinch saffron threads, preferably Spanish
10 oz Roma tomatoes, chopped
3 tbsp fresh cilantro, chopped
12 oz dry white wine
8 oz heavy whipping cream
salt & pepper, to taste
Method for Penn Cove Mussels
• In a very large sauce pan, heat olive oil until shimmering. Add garlic and shallots and sweat for 1 minute.
• Add saffron and wine and simmer until reduced by ¼
• Add mussels, tomatoes, cilantro and cream and cover. Cook until the mussels just open, around 6 minutes.
• Season to taste and portion into warmed bowls.
