Damien Watel

Damien Watel's French upbringing sent him straight to cooking school in Paris. An uncle with two restaurants in Dallas gave Watel his American start, and he soon jump-started his career with a restaurnat of his own. Suffering burnout, the wandering Watel then came to San Antonio and worked with Bruce Auden. Bistro Vatel, dedicated to the simple but sophisticated French food that Watel seems born to cook, was eventually born as well, but culinary wanderlust remains: He has just opened Italian-inspired Ciao Lavanderia at the opposite end of the same strip center, adding buon appetito to bon appetit.
