| Ingredients |
3 1 lb bags Dry, Big,White Lima Beans, soaked
overnight then strained
2 lbs Smoked Neck Bones
2 lbs Pig Tails

| Method |
| Boil pig tails and neck bones in 2.5 gallons of water until
tender.
Take out of the pot to cook then pick meat off of bones
(save bones to enrich other stocks).
Strain stock through strainer into pot then add beans
(salt, pepper, butter or margarine to taste).
Let cook covered, simmering about 1 1/2 hours until
done.
Add picked meat to pot 5-10 minutes before beans are
finished.
Served with white rice and Fried Pork Chop, Collard Green
or simply with corn bread |
